Autumnal delights from the Little Library Cafe

The phrase ‘I could make these in my sleep’ may seem hyperbolic, but it is absolutely true here. I have lost count of the times I have melted butter, honey, and brown sugar on the hob late after work, leaving it to cool as I gather my things together for the next day. Half asleep, and longing for bed, I have beaten the still warm sugars into the flour, before spooning the fragrant liquid batter into a loaf tin, or muffin pans. I have balanced the cake tins on the hob, and retreated to bed, leaving them to cool overnight, and rising early to ice them.
 
I made them first for my friends Anna and Jen; we were slightly sozzled on wine as we split them open and spooned the icing into them while they were still warm. I made batch after batch for the Tricycle Theatre Café, who sold them by the slice as I worked in the Learning team upstairs. I have made full-sized versions of them for weddings, wrapped in stalks of fresh rosemary. 
 
You’d be forgiven for thinking that, after icing hundreds and hundreds of them, that I’d be sick of them. But, while I don’t have much of a sweet tooth, I can never turn one down. It is difficult to choose a favourite recipe in The Little Library Cookbook – it’s full of food and books that I adore – but if I had to, these might just be it. We ate them at the launch, I’ve made them on camera, and they will end up popping up at events around the country over the coming months. I’d love to know what you think of them.
